Watermelon sorbetto
Indulge the cravings of your inner child with this sophisticated take on sorbetto.

Makes about 1 litre, serves 4-6

Ingredients
301.5kg piece of watermelon, rind removed and flesh coarsely chopped
165 gm [¾ cup] caster sugar
2 tbsp lime juice

Method

Process half the watermelon flesh in a food processor until smooth, then strain juice through a fine sieve and repeat with remaining watermelon. You will need 2 cups of strained watermelon juice.

Place sugar and [½ cup water in a saucepan and stir over low heat until sugar dissolves, then bring to the boil, remove from heat and cool.

Combine watermelon juice, sugar syrup and lime juice in a bowl, then freeze in an ice-cream machine according to manufacturer's instructions. Serve scoops of sorbetto in chilled bowls or ice-cream cones. Sorbetto will keep frozen for up to 3 days.
